Pumpkin Seed Granola


2 c baby pumpkin seeds (pepitas)
1 c slivered almonds
3/4 c raw sunflower seeds
6 Tbs pure maple syrup
coarse salt
1 c dried cherries or cranberries
 
Preheat oven to 350. Line 2 baking sheets with parchment paper or silicone baking mats.
In large bowl, toss pumpkin seeds, almonds, and sunflower seeds and the syrup until evenly coated. Spread nuts and seeds out in an even single layer on the baking sheets and season with salt to taste. Bake, stirring several times with spatula or wooden spoon until just golden, about 20 minutes.
 
Cool completely in pan, then add cranberries and toss to combine. Store in an airtight container at room temp.

Today I text Tam to see what she eats during this challenge when she's craving something sweet. She said she chews gum, makes a smoothie, or snacks on homemade granola. Well, I needed something different than a smoothie...and more than gum. Granola? Brilliant! Tam has a great recipe in her ward cook book (if you don't have it, you should....it's fantastic!!) Then I also remembered that I have a pretty yummy recipe too. I will probably be making both recipes in the VERY near future :) One calls for dried cranberries and one for dried blueberries. If you don't want to buy both substitute one for the other....or use both on both recipes....PERFECT!! Thanks, Tammy!!
